teff almond butter cookies

I'm still trying to figure these cookies out.  I like them.  The flavor is good, and they will satisfy a sweet tooth, but the texture is a little funny and despite me decreasing the oil, they still seem to come out a little heavy.  Don't be afraid to play around with this.  If they seem a little dry, try adding more oil or applesauce to the dough.  If they seem too wet or oily try adding more teff flour.  You can always taste the dough before baking- it doesn't have anything that could make you sick without cooking.

Teff is the seed of an annual grass native to Africa.  Teff has an attractive nutrition profile, being high in dietary fiber and iron and providing protein and calcium.

To make these cookies, I ground my own teff in my blendtec blender to make teff flour.

Here are are some great options for teff and teff flour:
After mixing the ingredients listed below I spooned them onto a cookie sheet and gently pressed them with a fork.  You can tell they are a little wet.  This is from the almond butter, coconut oil and applesauce.

And here is the final product!  I served these cookies with apple slices, and everyone ate them and liked them!

Teff Almond Butter Cookies
1.5-2 Cups teff flour
1/2 t. salt
1/2 t. cinnamon
1/2 C. almond butter
1/8 C. molasses
1/2 C. maple syrup
1/3 C. coconut oil
1 tsp. pure vanilla extract
​applesauce, one tablespoon at a time to help moisten if needed.

Preheat oven to 350. Mix all ingredients well then let it just sit for a good 10 mins. This will give the teff some time to absorb some of the liquid. Spoon or roll into balls onto pan sprayed with cooking oil and flatten with fork gently.  These don't rise or flatten with my experience so you can shape them close together without them touching during baking. Bake 10-11 mins, sprinkle with sea salt if desired and let cool before enjoying.
