Here is a super easy, set it and forget it recipe for your weekend!
My family LOVES these beans. We eat them over brown rice with a bunch of toppings like avocados, tomatoes, lettuce, green onions, red peppers, salsa, corn, cheese, tortilla chips. We eat them in tacos or as a side to enchiladas. I've used them in chilis and soups, these black bean and butternut squash burritos from oh she glows are also a favorite, but
wherever they are, they are downright delicious, and loaded with fiber, protein, iron, magnesium potassium and calcium!
What you need:
1 lb. dry, uncooked black beans
1 onion, chopped
2 tsp. salt
1/3-1/2 C. vegetable oil
7 cups of water
What you do:
Chop onion and throw it into your crockpot.
Rinse and sort dry beans well and throw them into your crockpot (remember, no soaking needed).
Add oil, salt, and water.
Turn your crockpot on HIGH and cook for 8 hours. I usually stir mine about 1/2 way through, but this isn't necessary.
Your resulting beans will be soft and ready for use in whatever you please!
These beans also freeze well and can be stored in the freezer for about 3 months. Just make sure you label your ziplock with the date and don't forget about them (like I've done before). Enjoy!

I love compression stockings. I have always had poor veinous return in my legs and love how compression socks help support the tiny blood vessels that return blood back to my heart. This isn't my first pair of compression socks. I purchased my first pair when I was pregnant with my 3rd baby and was having problems with spider and varicose veins. My legs would ache all the time but with compression stockings on I noticed a big improvement in my leg fatigue and my ability to stand for longer periods of time.
Even when I'm not pregnant my legs will get tired easily if I'm standing for too long, so I knew that this compression thing was a good idea for my legs. I was using the compression stockings I had from my pregnancy off and on for a couple of years and recently decided it was time for a new pair.
I searched on Amazon and found Mojo brand to be affordable with good reviews.
Here is my Fit, Feel, Function rating:
Fit: 8.9 I ordered a size SMALL. The foot and ankle width could be a little tighter and supportive (ie, more compressive) for me but I have pretty small ankles and average to narrow foot width. This is the only reason for the lower rating. The compression around the rest of my leg is superb without being too tight.
Feel: 10 These feel nice. Not scratchy and they stay put.
Function: 10 They fulfill the measure of their creation. My legs feel supported and even energized with them on. I think compression stockings and running shorts are my new favorite uniform for running.
Here is an easy vegan main dish for a simple, nutritious and flavorful dinner that uses ingredients you likely already have on hand. I didn't follow a recipe (following one is rare for me) but if you use your intuition you'll do fine and end up with a simple and clean dinner.
vegetable or chicken broth
chopped veggies like onions, garlic, carrots, peas, celery, mushrooms. Try broccoli, spinach or chard, zucchini, etc.
butter or a healthy cooking oil like olive oil or avocado oil
Here's the gist:
Cook brown rice in vegetable or chicken broth with a bit of avocado oil or butter. I used my rice cooker.
Sauté chopped veggies (I did: onions, garlic, carrots, celery, mushrooms, peas, parsley) in a bit of oil or butter.
Combine the rice and veggies
Salt and pepper to taste
It really is that easy. See! You didn't need a recipe for that!
